Advent 2018: recipes from chefs that you can make at home

Advent in 2018, lasts forty days and is one of the most rigorous in the year. Despite strict restrictions on food during lent can and should eat diverse. In our material you will find recipes for delicious meatless dishes on Christmas post 2018, which you can replicate in your kitchen.

Famous Ukrainian chef, graduated from culinary school Le Cordon Bleu and founder of Gastroenterol Confiture Eugene Klopotenko shared with the editors Lifestyle24 their personal recipes of hot dishes, salads and light snacks for advent 2018. Prepare these dishes at home and make sure that even during lent, you can eat tasty and healthy.

Salad with pear and pumpkin

Ingredients for 1 serving:
– 60 grams of pumpkin;
– 40 g pear;
– 30 g of sunflower oil;
– 70 g of mixed salad;
– 1 sprig of mint;
– 50 g of nuts;
– pumpkin seeds – optional;
– salt to taste.

For the sauce:
– 5 g American mustard;
– 30 g of sunflower oil;
5 g balsamic vinegar.


Recipe salad with pear and pumpkin

How to cook salad with pear and pumpkin:

1. Pear and squash wash and peel. Cut them into thin slices.

2. Heat the pan, add the sunflower oil. If you prepare the salad after the end of the post – replace sunflower butter. It butter gives a special tenderness of the pumpkin.

3. Put in a pan the pumpkin, sauté for 1 minute over medium heat. Put the pumpkin on a paper towel to get rid of excess fat.

4. For the sauce, mix the mustard, oil and balsamic vinegar.

5. In a deep container, put the lettuce, add the pear, mint leaves, pumpkins, nuts, pour the sauce, salt and mix.

Pea puree with cherries

Puree of peas and cherries can be served as an appetizer or use as a garnish. After the end of the post – try to pair this sauce with your favorite meat.

Ingredients for 2 servings:
– 100 g frozen cherries;
– 300 g frozen peas;
– mint;
– ground cinnamon;
– salt to taste.


Recipe for Pease pudding with cherries

How to cook Pease pudding with cherries:

1. Pour over boiling water, frozen peas and cherries to razmorozili and become soft. If you have more time, it is better to let the foods thaw in the refrigerator or at room temperature.

2. Pour out all excess water after thawing peas and cherry. Grind them in a blender along with cinnamon and mint. Salt.

Tip: after the end of the post also in the puree you can add heavy cream (50ml). So you get a more delicate texture.

Banana with onions and curry

After this meal, your life will never be the same. That is an unusual combination of vegetables and fruit in this dish will allow absolutely on-to another to look for food.

Ingredients for 3 servings:
– 2 bananas;
– 2 red onions;
– 50 g of butter (oil is at your discretion, during the post – just don’t add it to the dish or replace with vegetable oil);
– 0.5 tsp. curry;
– juice of 1 lemon;
– salt to taste.

How to cook bananas with onions and curry:

1. Wash the bananas and cut them into rings (do not clean from the skin). Red onion cut into half rings.

2. In a small saucepan put the butter (in our case, a small amount of vegetable oil), bananas and onions. Add curry and sauté 10 minutes. At the end add salt and add lemon juice. Try and have fun!

Carp Thai

Ingredients for 1 serving:
– 1 carp;
– 50 g of ginger;
– 100 g carrots;
– 1 clove of garlic;
– 1 lemon;
– 1 onion;
– 1 tsp soy sauce;
– chili pepper – to taste;
– cilantro, fennel, anise – to taste.


Recipe carp Thai

How to cook carp in Thai:

1. Clean the carp from the inside and wash. Make carp incisions, salt and pepper.

2. Ginger and carrots cut into strips. Onions cut into half rings. Garlic crush. From lemon squeeze the juice.

3. In a pan pour vegetable oil and good heat. The fish lay on a heated squardo, then put ginger, carrot and drizzle with lemon juice. Put the remaining vegetables and spices, season the fish and pour soy sauce.

4. Sear the fish on both sides until a beautiful brown.

Potatoes with mushrooms

Ingredients for 3 servings:
potatoes – 6 PCs;
– butter-70 g (during lent, replace with vegetable oil);
– oyster mushrooms 100 g;
– onions 50 g;
– the garlic clove;
– salt, pepper;
– rosemary.


Recipe of baked potatoes with mushrooms

How to cook potatoes with mushrooms:

1. Cut the potatoes lengthwise into two parts. Each piece cut crosswise, hold in place with fingers, it didn’t break apart.

2. Put the potatoes into the baking parchment, brush with oil. Add salt, pepper and add the rosemary. Cloves of garlic crush the flat part of the knife and put the potatoes. Put the potatoes in a preheated oven to 180°C.

3. Wash the mushrooms and cut into large chunks. Slice the onion very finely and fry in butter few minutes, add the mushrooms and stir. Saute mushrooms a few minutes until they reduce in size.

4. Sprinkle potatoes stewed mushrooms and bring the potatoes until tender.
